What you will have to do is an Edition upgrade. So you will run Setup
again. Exactly how much downtime, if any, that incurs, I don't know.
By the way, note that there is no upgrade path from SQL 2005 standarad
to SQL 2008 Evaluation, at least not documented in Books Online. But I
assume that the plan is not to ugprade the 2005 instance, but move the
databases to a new machine.
