Hello,
Does anyone have/know of a template doc for documenting AS cubes in the
design stage (i.e. BEFORE they are built, hence OLAP Scribe won't work).

You might take a look at Adapt.
This is a Visio template available from:

www.symcorp.com

There's a whitepaper on using Adapt at:

Thanks Michael but like OLAP Scribe. that requires the cubes to be built
already. We're simply looking for a template to document our cube design,
hence before the cubes are built.

Ahhh...

Then Brian's advice was good .... you could also download Microsoft's
Business intelligence accelerator and look through the way they chose to
document this example.

Documenting an AS solution isn't just AS - it's DTS, SQL and so on....they
actually use Adapt when diagramming
AS cubes.
