I seem to have a small problem with either my Excel Version (2003 SP2) or
the OLAP 9 driver, or SSAS 2005 (SP1).

Modifications to the data source (SQL 2k5, same machine) were made: a
dimension had one entry added, and data was added which belongs to the new
dimension entry. The analysis DB was rebuilt completly, all dimensions, all
cubes.

The server side tools, BI Editor and SQL Management do show all the
dimension entries and count the measurements for each one as they should,
yet an Excel worksheet does only show the new entries name, but not the
counts for it.

Opening a new Excel and creating a new connection on a new worksheet did NOT
fix the situation. Using "Refresh Datasource" in Excel also does not help:
The dimension entry appears as header, but has no values counted to it.

Connections are made using Administrator's account (unrestricted) to ensure
no rights violation causes this.

Since you're using AS 2005, tracing the MDX queries generated by Excel
to the server (using SQL Profiler) might yield some clues as to what's
happening.
