Excel 2003 doesn't support the server-defined format.
Excel 2007 does use it.
If you want to use Excel 2003, the only way to make it working is to
use the Excel Add-In for Analysis Services (see my post:
http://sqljunkies.com/WebLog/sqlbi/a...24/17686.aspx).

Every time I have to change the format in Excel for these Fields, also
once these fields are removed from the data fields and placed back it
loses its format.
