We are looking for on-disk encryption. If we use a 3rd party tool, how
will Analysis Services be able to decrypt and display the data?

If you use EFS (part of Windows 2000), it will happen transparently for you.
The data will be only decryptable by the account under which Analysis
Services are running.

As Mosha suggests, EFS does work on disk. It does require
that the AS service be running as a local or domain
account (not the system account) and that the \data folder
be encrypted while you are logged into the server as that
account. This then allows the service access to its \data
folder via the account and EFS. Note however, that the
additional layer of encryption may slightly impact AS
performance reading and writing to disk (although I have
never tried to measure it).
