I am pretty sure that I am following excatly the steps outlined in the
"MIGRATING THE ANALYTICAL APPLICATION" of the BI Accelerator docs.

However, even after setting the Config.Ini with the right database name, the
DTS connection objects still have the name of the server that I am migrating
from.

Any suggestions would be greatly appreciated.

That should be true in the designer. But at runtime they should be
overriden.
If they are not, then it may be that the files are not in the right place,
or the registry settting which points to the top of the tree is wrong.

Just add some script code to the DTS packages and you should be able to see
what is happening.
