Is there any way to get all defined Analysis Project properties (like
the defined perspectives and the diminesional relationships) out of the
Business Intelligence Studio?

Maybe with a 3rd party tool?

If you do a "script database as create to file" you get a complete XML
description of the catalog. You can then generate documentation with it -
for instance by transforming to WordML.
