We have uninstalled AS and SQL from the server and have all the file for the
cubes, is there a way to attache the cube to another server like you can with
a database? We do not have .cab files of these cubes and needed to rebuild
the server.

Sorry. I have bad news for you.
Unfortunately, you will have to reinstall and re-create everything.
Hopefully you kept some documentation.
