if I create a MOLAP partition all the aggregates and fact data is loaded
into memory. Is that cube then fully functional when I remove the dimension
and fact files from the \Program Files\Microsoft Analysis Services\Data
directory?

because the data are loaded in memory only when needed.
and AS can free its cache if requiered
so removing these file can cause a lot of trouble
