What do you mean by unprocess? What are you trying to do?

There is this processing option in the AS2K5. I want the same under AS2K.

There is no specific function. You have to trick the system by requesting
something which has the desired "unprocess" effect. My favorite approach is
to just do a full process of a non-changing dimension used by the cube.
Bingo. Anything which uses that dimension is now unprocessed.

If you don't mind a short outage you can do the following:

1) stop the AS service
2) delete the Cube folder and dimension files from the data folder
3) restart the AS service

To make the outage as short as possible you could do all this in a
single command file.
