Hello,
I process shared dimensions with DSO and on some databases dimensions
process with refreshing partition definitions (which is slow) and on other
databases dimensions process without refreshing partition definitions.
What's the reason?

It depends on what type of processing you are doing and what type of
dimension it is.
Look in the AS Performance Guide for the discussion of a "changing"
dimension and the difference between an incremental process of a dimension
and a full process of a dimension.
