Hello,

I have a cube that I'd like to refresh every 5 minutes or so.

Can it be detrimental to refresh a cube so frequently?

If I have users who use PivotTable services to view the cube's results, what
will their experience be like when they query the cube while it is
rebuilding (the rebuild takes around 15 seconds).

Have you considered Real-Time OLAP?

OLAP Server keep a copy of old data while processing. Old data are replaced
only when processing ends: in this moment the users will see a blank pivot
table. They must then push "Refresh Data" button to see them.

Real-Time OLAP sounds like it would be a good fit for us. Does Microsoft
provide this? Is there an add-in for Analysis Services. I'd love to hear
more!

Real-time OLAP features require a SQL Server 2000 data source to be used
when creating the cube and some other requirements.
Search for "Real-Time OLAP" and "Real-Time cubes" in BOL
