Are there any detailed documents on the Foodmart 2000 database schema and the Cube design

Generate some yourself :-)
Download the OLAP Scribe utility and point it to Food Mart.

You'll get 30-50 pages of documentation :-)
OLAP Scribe is a *way* cool tool -- anyone who works with Analysis Services
should get to know it. You'll love it.

We use the OLAP Scribe tool - its very handy and useful
But I was looking at some docs which would describe the FoodMart database for a newbie to Analysis Services...The various functions / features used in those cubes etc..

Hmmm.. the best I can think of is to run the Analysis Manager tutorial.
Bring up AM and on the main page is a link to "Analysis Manager Concepts &
Tutorial". The features in Food Mart were designed to highlight particular
Analysis Services features. It is not a real life application (although some
it might seem so :-). It's real purpose, like "pubs" with SQL Server RDBMS,
is to act as a platform for working with AS functionality. Since the
Tutorial walks you through AS concepts and features -- it then shows those
in the context of Food Mart. That's the closest that I can think of to
satisfy your request.
