I'd like to deploy Excel as end-user OLAP
application, that is, as front-end to an MS
Analysis Services database.

Question: what's the difference in functionality
between XP and 2000 versions of Excel?

Background: I already have Excel 2000
installed. I've heard XP is better in OLAP functionality
that its predecessor - question is how much better,
that is, why should I buy the XP edition?

A little feature that users really like in Excel XP is the ability to check
or uncheck all at the dimension levels. This can be a real pain if you have
a lot of members in your dimension.
