I currently have a rather large Analysis Services database containing
several different databases. I'm coming upon storage issues very quickly.

Is there any way to point a specific cube or Analysis Services database at a
different drive within the same server?

no
only 1 folder could be used.
(this limitation changes in 2005)

but, maybe you can use another disk and mount it as a sub-folder instead-of
assigning a dedicated letter. (not tested by me)
