Are OLAP services included with SQL 2000, or an add-on? I
can't seem to find any information. Thanks

Full Analysis Services (no longer called OLAP services) comes with
Enterprise Edition.

OLAP Services and Analysis Services have always been bundled with both
standard and enterprise editions of SQL Server 7 and 2000 respectively.

standard and enterprise edition provides Analysis Services.
The enterprise edition has more features like real time cubes,
partitionning...
