Yes.
Just make sure that the new data source has the same
table names with the same structures like the old one. If
not, you'll have to modify your dimensions and/or
measures accordingly and, of course, reprocess the cubes
that use these dimensions/measures.

Open Analysis Manager - Expand the Database - Expand Data
Sources - Right Click on the Data Source - Select Edit -
Make the required changes on the Connection tab - Close
the Data Link Properties Window - Right Click on the Data
Source Again - Choose Refresh.

Thanks you again, Sanka. I was really looking for a way to create a new DS
and re-point a cube to it or a way to rename the old one after modifying it
as you described.

If you have already migrated the repository to SQL Server
then

you can edit "MSDB" Database, "OlapObjects"
table, "ObjectDefinition" column

Look for "<DATASOURCE Name="

Change <DATASOURCE Name="Your Connection"... to
<DATASOURCE Name="New Connection"...
