Can I backup Analysis Services database while processing is occuring or
process while backup is occuring ?

Also is there a way to just script out or backup just the schema for the
OLAP databases and not the data ?

to backup the schema only one easy way is to copy your database into a new
one, this create an empty database with schema only. then backup this
version.

you can also backup only the repository database. but I have not tested this
for a restore action.
