It appears that our current DTS packages can't work under 2005, I'm looking
for a definitive list of what must be changed so that I can start looking at
what we have to do to our DTS packages in SQL 2000 to make them compatible
with Yukon.
Is there such a list ?

So far I have found vague hints only, which aren't telling me much.

There is an upgrade path but note that this is best efforts only and if you
have really built a complex package with scripts here there and everywhere
then it is probably not for you. In BOL there is a whole section devoted to
this
