Are there any reasons why the SQL Server Service of an SQL Server 2005
Cluster (active/passive), should not be restarted using Management Studio?

Is there any reason why the SQL Server Cluster should be taken offline
before restarting the service?

Sean,

MSCS Cluster Service monitors the current state of any resource that a
cluster manages. In the case of a SQL Server-based MSCS environment, the
Cluster Service monitors the SQL Server service. The Cluster Service
detects stoppages of these services, but it can't distinguish between a
user-initiated shutdown and an unplanned failure. So you must stop and
start SQL Server through the Cluster Administrator rather than the Control
Panel or the standard Service Control utility.

The SQL Server service is shutdown when you take the SQL Server resource
offline in the cluster administrator.
