Did you:
copy all the files from DOS machine to Windows machine?
remove the hard drive from DOS machine and install in the Windows
machine
upgrade the DOS machine to Windows?

All without first making a secure copy of files you cannot repair?

Sorry I know nothing about Nutshell.

At this point, if I was brought in, I'd see what data I could reverse
engineer out of the files. The question is: is reentering 8months of
data possible, and if so, is it more or less costly than paying
someone that knows what they are doing to try to recover the missing
data.

I know that's not much help for you, but hopefully this serves as a
lesson learned for others BEFORE they start a project like this.
