Does anyone know a method for determining which patches have been applied to Oracle Server?

click on "Installed products".

For patches not installed by OUI, you can download the patchset, extract
the files, and compare the dates of the binaries.

There is a tool called OPatch on the metalink site, or you get it when you
download a patchset I think. It gives you a comprehensive list of patches
installed, at least it does for 9.2.0. Don't know what it's like with other
versions.

I am not so sure,
Try the table AD_APPLIED_PATCHES, this shows all the patch numbers
applied thru adpatch tool.
