For a theoretical overview of datawarehousing and OLAP look no further
than "The Datawarehouse Toolkit" by Ralph Kimball. It is not in any
way written with a particular piece of software in mind: this is pure
theory.

I'm a university student newbie to OLAP and found many resources on
the internet but I fear almost all of them are related to specific
software. Can anyone tell me where can I find theory? I mean, I would
like to know what is the necessary background, then how cubes are
constructed, then ways to analize them and so on.

You should look my OLAP home page on the web. It's an introduction to OLAP,
useful for beginners...
