I'm new to OLAP but am familar with relational databases. I have a
relational database for product sales forecast. So, basically three
tables: tbl_Product, tbl_Product_Sales, and
tbl_Product_Sales_Reporting.

The last table is used for reporting/categorizing records in
tbl_Product_Sales as either a "new release" or a "catalog" sale. How
would I replicate this reporting table using a cube or dimension...or
would it be a member (product) property?

Yes. Further... star scheme can also avoid some record replication
problems in reports,
should you define functions on dimension tables.
