I'm looking for a GUI query builder for a non-technical person who is
fluent in excel. I'm thinking like pivot tables in excel. Anyone know
of any?

I never tried myself, but MySQL + ODBCdriver + suitable
DSN definitions + MS Query + MS Excel should do the job.

Sounds difficult, and the first time it may take several
hours to set up and get used to, but at the end it is a
simple solution.

MS Query might be bundled with MS Excel, I'm not sure.
