You select fields in Queries, not in datasheet view of Tables. If this is a
"developed application", it is wise not to give the users direct access to
Queries or Tables, in any case, but to display the information via Forms and
Reports. If it is your personal database, then you can choose to create a
Query and use that to View, seeing just the Fields you want, or to see them
all.

I concur, this really isn't a good idea. I would build a form the
usual way and include only the fields you want to see.

If you absolutely need to do this then you can open the table
highlight the fields you don't want to see and hide them (right click
and hide column)
