To calculate the size of a dump, do i take all pages on all chunks or just
used pages in chunks ?

The size of the backup will increase as the number of used pages increases.

Actually, it would be better if you take npused of each table/fragment to
get an estimate of the size of the backup ... you got to add the logical
logs as well ...
