Or will it run on a regular machine, in this instansce, OS X 10.3?
Pros? Cons?

No, it doesn't require a "server" but performance will be better.

A server is defined primarily by the operating system it is running, which
is optimized for multiple connections, speedy disk access, and many
transactions at once. Some OS versions (like Windows XP) may limit
concurrent network connections, too. Secondly, servers usually have better
hardware: beefier processors, memory, and disk subsystems.

I am getting old, or at least so my nephews and nieces tell me, but I
seem to rememberr 5.5 will also work with a Linux box.

Yes, for a brief, shining moment of clarity, FileMaker Inc did the right
thing and produced a Linux version! But alas, no more.

Even if I could bring myself to use 5.5 (giving up all the great new
features introduced since then) -- where could one find a license for it?
I'm sure FileMaker won't sell you one nowadays.

FMI has done downgrades for a few people I know - buy 8.5 clients and 8
server and get also license and disks for Server 5.5 and 6 clients.
Don't know if it is an ongoing policy...
