Right Click the field and choose Date Format

Same as before: format the text object using the Date command in the Format
menu.

With my cursor on the // symbols, Date Format is not a choice. So I
figured, what the heck, I'd try selecting the entire letter block.
Sure enough, Date Format was available from the context menu and it
worked.

Surely you all must realize that this makes NO SENSE AT ALL!! <s>

First, go to layout mode...

Next, select the form letter text object...

Then, choose "Date..." from the Format menu...

And, change away.

This changes the date format for that entire form letter.

If you want 2 different formats, you need 2 different text objects.
