In FMP 8 and may earlier versions, in layout mode, the first menu point
or Cmd-N is an assistant for the creation of a new layout.

I used it and unfortunately chose the preselected acqua style layout
type.

Now that I'd love to get rid of it (especially of the blue blackground
that gets printed!) it seems I can't select and change or delete
elements like this, or go back to the assistant as the help file says -
this would just create a new layout.

Is this the only way or did I miss something?

You can modify any element of layouts created with the preset styles.

- Click on a part label. You can change the fill to none.
- Click on the text tool then Cmd-A (Select All) to change the attributes of
text labels
- Delete an entire layout with Cmd-E
