Is it possible to disable the menu at the top ?
I mean, can I set my own menu ?

There are plug-ins that offer such abilities, but I've never used them.
It's also RUMOURED that FileMaker 8 will have more / better menu
controlling abilities and is RUMOURED to be due "soon".
