It is NOT a file option
It IS a general option
It is NOT found under File > General Preferences
it IS found under Edit > Options (The lowest of the menu)

The lowest menu in Edit is "Export field Contents..."
General Preferences are in application menu (at the right from Apple
menu)... so:
FileMaker -> Preferences
I've 5 tabs there: General, Layout, Memory, plug-Ins and Fonts, but in
none I can find something about Quick Menu (or anything it's called).
All I have in general tab, I'd explained in the previous post

I have two extra items below export field contents (using windows) I will
check where it is with OSX

These are all file options, so it is logical you will not find it there.

Exactly where I've:

No, finally I found it: it's in the last menu item (Help), third item in
the list (not counting help search); this item opens directly the Quick
Menu, inside there's a flag to open it self at FileMaker start.
