I am looking for a recommendation for an email plug in to run with FM 8
and 8,5 on both Mac and Windows. I want to add the ability to the
solution to send email from FM via a server. I need to be able to
specify the return address and select which attachment, if any, is
attached to the email.

It will not be used for bulk mailings. Most of the emails will to go one
person.

It would be nice to be able to receive emails that are sent to a
specific address to process requests.

I have seen a few, but would like to tap into the groups collective
experience.

I used either 'mailit' at http://www.dacons.net/fmplugins/mailit/ and
'emailer' at http://www.datadesigns.com/products/products_im.htm.
The first sends mails on fields contents. I use it for standard mails.
The second sends full layouts with fields also of course. I use it for
complex proposals with many imbedded images in the layouts. The 'imailer'
file resides at the server level. Their hotline is very efficient and
friendly.
Both work very reliably.

Not quite sure what you mean by '...via a server'-- I believe there are
still no server-side plugins for Filemaker, and this one certainly works on
the client.

In any event, the it will easily handle the functions you describe. They
also offer an older POP3iT plugin (which works fine) for the receiving/POP
