I just discovered that my Filemaker Server has Windows Sharing enabled,
but I don't recall ever enabling it myself. Is this something that
Filemaker Server might have done automatically?

Does FMS7 need Windows Sharing enabled?

Certainly not : the bases that are under FMS folder must not be shared
in the OS sense. FMP ans FMS have their own way to 'share', so if there
is both, you may take it for certain that one of these days tou'll get a
conflict and files corruption.
