Our app, TAS Books, uses the pervasive server engine. It's setup on the
server, a quad xeon 700 with 2gb ram, pretty typical install.

Is there anything I can amend in the config on the server to increase
processing speed?

Which particular version of Pervasive is installed? The new version
is tuned differently than the previous versions.

I am pretty much guessing that the application uses the transactional
interface, but it would be tuned differently if it use SQL.
